The Business Bite: Faru, Durham
What makes it unique? This is high-end dining without pretentiousness - expect foraged ingredients and a focus on flavour and intention.
Blow the budget or budget eat? Full ten course tasting menu £98. Wine flight for £65. Four course menu £50, with three glass wine flight for £35.
Service: Friendly with no fussing. This is fine dining with a personal touch.
Sommelier on hand? Yes, co‑owner and front-of-house director of Faru Laura leads the service and wine curation.
Opened in 2023 by husband-and-wife team Jake and Laura Siddle, Faru has quietly built a reputation for its focused, produce-driven tasting menus. The restaurant's name, derived from the word 'Faru,' meaning 'journey' in old English, reflects the couple's commitment to creating a dining experience centered around high-quality ingredients and sustainable sourcing.
On our visit, we sampled the Jake Siddle x Dan Merriman tasting lunch, a concept that saw each chef alternating dishes for a menu full of contrast and depth.
The beautifully balanced duck liver parfait with cherry and duck ham was a stand-out dish. Duck liver parfait piped between duck fat brioche tuiles with cherry gel, pickled cherries and a slice of perfectly pink duck left us wanting a full menu dedicated to this flavour sensation.
When it came to dessert, courses the peanut, banana and chocolate dessert encompassed nostalgic flavours, treated with real finesse.
One of the biggest highlights of the experience was Laura, the sommelier and co-owner. Her wine knowledge was outstanding and the way she explained everything felt warm and personal.
The whole experience was seamless, refined and full of personality.
Faru are offering a complimentary wine tasting flight with every full price tasting menu on Saturday lunchtimes this August (2025).
